When deep frying, is it safe to mix used and new oil, provided they are the same type? (canola)?
I have a batch of oil that was used five or six times, so its somewhat brown. In refilling the deep fryer, it barely reaches the minimum level. I'd like to simply mix new oil (both the same type, canola, even came from the same bottle) in to fill to the mid level rather than dispose of the old oil and completely refill with new, but I'm curious if it's safe to do so.
It is not a question of safety, it is safe. It is a question of mixing oil that has been used and will transfer flavors, to the new oil. Also, if not used on a regular basis the oil can turn rancid and you are just diluting it with the new oil.
Sometimes I take the old oil and use it for frying or making pop corn in a last time use while I use only new oil in the deep fryer.
